Who doesn’t like to start a good lunch or a nice meal with a delicious appetizer?
Today, in collaboration with Gadis Supermercados, I’m bringing you this recipe for anchovy butter. It is a delicious entrée which is not only easy but very quick to prepare too, it will only take you five minutes.
One added advantage is that you can prepare it in advance and take it out of the fridge minutes before you eat it. Today, I’ve had it with crackers but it can also accompany crudités or a bolla gallega (a Galician bread).
I’m a big fan of both anchovies and butter, so this is a perfect recipe for me. If you are too, pay attention:
INGREDIENTS
100 gr pure unsalted butter (I personally prefer Irish brand KerryGold)
50 gr anchovies in olive oil
The juice of one quarter of a lemon
Optional: chopped parsley
METHOD
Leave the butter outside the fridge overnight or a few hours before preparation so it is easier to handle. Feed the anchovies and the butter into the mincer. Add the juice of a quarter of a lemon. Anchovies have already quite a bit of salt so I don’t need to add any.
After 1-2 minutes anchovies should be perfectly minced. Put the mix in a bowl and put it inside the fridge. Take it out about half and hour, or one hour before your meal. Not longer, because you don’t want it warm either.
