If you were to ask me about one of my favorite recipes this time of year, I would definitely say thus apple, cinnamon and cardamom cake. I’ve just baked one today, using Biocop’s delicious organic cinnamon. It’s perfect now that you have your kids around at home all day because it is really easy to prepare.
There is no better way to spend all the extra time we have now than to cook. This is what quite a few people are doing. Learning new recipes and working on those techniques that need improving is an excellent therapy to counter all the bad news we read and hear about everyday. A great way to make quarantine time a little less stressful or boring.
I continue working from home these days, and because I have more extra time now, I’m trying to cook something new every week. I take out my camera, accessories, and props, so I can then share with you all the new recipes on my Instagram account. This apple, cinnamon, and cardamom cake, made with Biocop’s delicious organic cinnamon, is my latest creation.
INGREDIENTS
110 gr (½ cup) unsalted butter
150 gr (¾) brown sugar
2 large eggs
210 gr (1 ⅔ cups) plain flour
1 tsp baking powder
A pinch of salt
1 tbsp ground cinnamon
2 tsp ground cardamom
300g peeled, cored and sliced cooking apple (one large apple)
METHOD
Preheat the oven to 180°C (350°F). Line a 20 cm cake (8 inches) tin with a removable base. Now, with an electric hand mixer or with your KitchenAid, beat the butter and sugar. Add the eggs, one at a time, mixing well.
Then, add the flour, baking powder, salt, cardamom, and cinnamon until you have a thick cake batter. Stir through the apple and pour the mix into the cake tin. The batter will be thick, so use a spatula to spread across the base of the tin.
Remove from the oven, allow to cool, and… enjoy!
