A few days ago, in Stories, I asked you to tell me what kind of recipe you’d like to see in 2022 and interestingly, fish overwhelmingly beat meat. So here’s a simple but delicious and healthy idea that I made for lunch yesterday: baked salmon with lemon and olives.
On this occasion I accompanied the salmon with boiled potatoes for a delicious and complete dish.
INGREDIENTS
Fresh salmon
Extra virgin olive oil
Fresh mint
One lemon and a half
3-4 tbsp green olives
METHOD
Pour some olive oil into a saucepan until the bottom is completely covered. Now, add the fish, green olives, some fresh mint and a lemon and a half in slices. Put some slices below and some above the salmon, to give the sauce the right citric touch.
Add pepper and salt and bake for 15 minutes at 180ºC (350ºF). Remove from the oven and serve immediately. I hope you like it!
