ESPRESSO COFFEE CAKE

As much as I adore baking, there are weeks I don’t have a moment’s rest between photoshoots, blogging, and seeing clients. In those days, I don’t find myself opening a cooking book for a new recipe. So, I turn to an “old friend recipe” like this delicious espresso coffee cake. It’s in my honest opinion the best cake for coffee-lovers. If you love so much coffee as I do, trust me, this recipe is for you!

For a special touch, I always prepare this cake with Lavazza coffee, an Italian brand you can easily find in Gadis Supermercados

INGREDIENTS

200 gr (1 ⅔ cups) all-purpose flour

180 gr (1 cup) brown sugar

130 gr (⅔ cup) unsalted butter, at room temperature

100 ml (½ cup) espresso coffee

2 eggs, at room temperature

1 tsp baking powder

METHOD

Start by preparing the espresso (or a very strong coffee) and then allow it to cool. Meanwhile, in a big mixing bowl, combine sugar and butter. Now, the eggs but one at a time. Mix well and then pour the coffee.

Hereafter sift the flour and baking powder and add them into the bowl. Combine and then transfer to a mould. Bake at 180ºC (350ºF) for 25-30 minutes. 

You can enjoy this delicious espresso coffee cake for breakfast or mid-afternoon snack with a mug of coffee.
