One of my favorite things about summer is all the colorful fresh products easily available. I just love the vibrancy they add to my dishes! Although I feel sorry when September arrives, since this means summer is about to finish, I wait impatiently to buy the first figs because it’s one of my favourite fruits. I still cannot believe they did not like me when I was a child! I love to eat them alone, with a piece of cheese or with this fig and burrata salad.
This is a dish that you can easily find on social networks this month but I decided to vary a bit the typical recipe and added cherry tomatoes prepared in a skillet with a dash of olive oil and some balsamic vinegar of Modena. Then I added arugula, Spanish prosciutto, black figs and this scrumptious burrata!
Simple, delicious, and so perfect to bid farewell to summer!
INGREDIENTS for two people
One burrata cheese (250 gr)
About 10 cherry tomatoes
10 slices of Spanish prosciutto
6-7 figs
Arugula
A dash of extra virgin olive oil
2 tbsp balsamic vinegar of Modena
Salt and pepper to taste
METHOD
In a skillet, heat some olive oil and balsamic vinegar, add the cherry tomatoes, crush them a bit and brown them on both sides at medium-high temperature. Cook for about 4-5 minutes and then, set aside.
Now in a big plate place the arugula, figs cut in 4 pieces each, prosciutto, the tomato cherry, and last, the burrata cheese.
Serve this fig and burrata salad… and buon appetito!
