This healthy bowl with escarole, avo, Brazil nuts, frijoles (black beans), bell pepper, and feta cheese has very quickly become a new favorite these days! For this I’m using a delicious new feta brand I found at Gadis Supermercados. It’s 100% Greek and I am using it with other recipes you can find in this blog.
INGREDIENTS
A few escarole leaves
Half of an avocado
75 gr feta cheese
50 gr black beans
Half of a red bell pepper
Half of a green bell pepper
A few of Brazil nuts
Extra virgin olive oil
ProvenÇal herbs
METHOD
Soak the black beans the night before and the next morning boil them for about 40 minutes. Drain them and set them aside.
Now, cut the peppers and prepared them in the grill with a bit of oil. Set aside.
In a medium bowl place the escarole leaves, then the avo, peppers, frijoles, and Brazil nuts. The feta as well. I love to crumb it as it remembers to my travel through Crete where they use to eat it this way. Then season with a bit of olive oil and add the herbs.
