It’s endive season, so in collaboration with Gadis Supermercados I bring you this delicious new salad. As those of you who visit my blog frequently probably already know, I love salads and I enjoy them all year round, even when it’s cold outside and it rains. So I’m always looking for new ideas and today I have an original combination for you: orange, red endives and mozzarella salad.
It’s a very quick recipe, which will take you only a few minutes to prepare: you’ll just need some juicy oranges (to use in slices, wedges or in pieces, you decide), endives and the mozarella, which you can slice like in caprese salads, or you can break it with your hands into smaller pieces, as I’ve done here.
Three red endives
One tablespoon of Herbes de Provence
Extra virgin olive oil
Salt and pepper (optional)
Take out the mozzarella from its packaging and let it drain for a while. Meanwhile, pull the leaves from the head of the red endives and place them on a dish. Now, peel the orange, remove the white pith, cut into wedges and put them on top of the endives.
Break up the mozarella into big pieces with your hands and place on top. Add some fresh basil leaves, some olive oil, Herbes de Provence and serve this orange, red endives and mozzarella salad.
