Today, on my blog, a new and delicious savoury recipe: pea, ricotta, and feta fritters. You’ll love this!
I have to confess I have never been a huge fan of green peas but I decided to give them a try with this recipe. It’s not easy finding fresh peas now, because they are out of season, but frozen peas gave these fritters a great taste anyway. The moment I took the first bite I knew I was in the middle of summer. Absolutely delicious. This dish is perfect as an appetizer, a first course or as the main dish!
INGREDIENTS for about 15 fritters
250 gr fresh or frozen green peas
100 gr wheat flour
100 gr feta cheese
60 gr ricotta cheese
2 medium-sized eggs
3 tbsp curry powder
1 liter of sunflower oil (for frying)
Salt and black pepper
Basil (for decoration)
METHOD
Crush the peas using a mincer, but lightly, because you want little bits not puree. Put this in a bowl and add the ricotta, the eggs, a pinch of salt and pepper. Mix thoroughly and then add the curry and the flour. Continue mixing and add the feta cheese, crumbled into little pieces. Mix this carefully.
Heat the oil in a big pan or casserole. Use two tablespoons to give the mix the shape you see in the photo (quenelle shape) and when the oil is hot, fry them for about 4-5 minutes or until they are golden.
Pull them out with a skimmer and place on a dish with paper towels to get rid of excess oil. You can now serve your pea, ricotta and feta fritters…buon appetito!!
