Grab a bottle of wine or some cold beers and get ready to enjoy this delicious snack I’m sharing today in collaboration with Gadis Supermercados. I got all the ingredients for today’s savoury cookies with olives from them. It’s a very simple recipe and it’s delicious too.
INGREDIENTS
125 gr. pastry flour
85 gr. cold unsalted butter
60 gr. grated Parmigiano Reggiano cheese
2 tablespoons of very cold water
3-4 handfuls of green olives
A pinch of salt
METHOD
Start by grating the cheese until you have 60 grams. Put this in a big bowl or KitchenAid, together with the flour and butter in cubes. Mix with your hands or with the KitchenAid’s dough hook. When you notice the dough getting dry, add the tablespoons of water, this will help you get a smooth mix.
Now add the salt, and olives, pitted and chopped. Mix thoroughly and place on a dry, flat surface, and make a roll with the dough. Wrap the dough in plastic film and let it cool in the fridge (I left it overnight and baked the cookies the next day).
With a sharp knife cut the dough to form the cookies. Place them on baking paper on a baking tray and bake for 10-15 minutes at 150º.
