If you’re having an intense week at work, as the ones I’m having lately, or just because you like the idea, today I am sharing this healthy and easy recipe: stuffed sweet potato with red beans and avo. Actually this is one my favourite ways to eat sweet potatoes: stuffed and baked!
I prepared them exactly this way a few weeks ago with the ingredients I had in my fridge and I liked the idea so much, I decided to prepare it again to show you the recipe. I hope you like it!
INGREDIENTS
One sweet potato
Two bunches of canned red beans
One small avocado
Fresh herbs, I had basil at home
4-5 cherry tomatoes
Extra virgin olive oil
Salt to taste
METHOD
Preheat the oven to 180ºC (350ºF). Cut the sweet potato in two, and cover each piece with foil paper. Bake for about 30 min or until cooked. Transfer them to a dish. Remove a bit of the pulp and add the red beans.
Cut the cherrys into 4 pieces and mash the avocado. Add a bit of olive oil and salt and then, add this to the sweet potato.
Last, finely chop the basil leaves or another fresh herb of your preference such as parsley or coriander. Serve this stuffed sweet potato with red beans and… Buon appetito!
