Some days ago Biocop, leader in bio products in Spain, suggested that I create a salad using its tahino as dressing, so I immediately started looking for ideas in books, Pinterest, Instagram, etc. I wanted something tasty but, above all, fresh.
Luckily, in La Coruña we have not suffered heat waves this summer, but I have been reading that many of you live in places where 40ºC (105ºF) has been frequent this year and this trend will probably continue for some weeks. So I thought I’d use oranges and cucumbers, which are nice and fresh.
So that’s how I came up with the idea for this salad. I also added radish and lettuce. For the dressing, I tried several combinations until I settled for this one in particular, which is the one I liked better.

INGREDIENTS
Half an orange
Half a cucumber
Lettuce mix
4-5 radish
For the dressing
80 gr Biocop tahini
The juice of half a lemon
1/2 tbsp maple syrup
Water to taste, depending on how liquid you want your dressing
METHOD
Prepare the salad in a bowl. First put the lettuce mix in the bowl, add the cucumber in slices. You can leave the skin, because it’s eco. Have you ever tried it like this? You’ll notice it’s crispier and tastier.
Divide the orange in segments and cut each of the into 2 or 3 pieces. With a sharp knife cut the radish into very thin slices.
Let’s prepare now the tahini dressing. Put all the ingredients in a bowl and mix. Add water until you obtain the desired texture. Do this little by little, because the tahini is thick.
